Chive Cheddar Popcorn

Square Roots chives have this magical ability to make anything cheesy better. Cheesy eggs? Better with chives. Frittata? Better with chives. Bagel with cream cheese? Better with chives! And now, we're bringing the power of chives to popcorn. So warm up the Netflix and get popping.

Chive Cheddar Popcorn

  • 1 pack Square Roots chives

  • ½ cup corn kernels

  • 3 tablespoons cheddar cheese powder

  • 4 tablespoons butter

  • 1-2 tablespoons of canola oil (any neutral oil: sunflower, grapeseed)

  • Kosher salt, to taste

Yield: 4 servings

  1. Heat 3 tablespoons of butter in a large stockpot over medium-high heat. Add 2-3 kernels of corn and wait for them to pop which will indicate if the oil is hot enough.

  2. When the tester kernels pop, add the remaining kernels. They should cover the bottom of the pot in a single layer. Swirl the pot to coat the kernels in the oil.

  3. Lower the heat to medium and cover with a lid. Continue to shake and swirl the pan as the kernels begin to pop, holding the lid down securely with a kitchen towel. When the popping slows significantly (1 to 2 seconds between pops), remove from heat.

  4. Continue to shake the pot for another 30 seconds or until the popping stops completely and transfer into a large serving bowl.

  5. Melt butter in the microwave.

  6. Drizzle popcorn with melted butter and sprinkle with Square Roots Chives, cheddar cheese powder, and salt to taste. Toss until evenly coated.
