Cooling from head to toe. An air conditioner in a glass. The sweetness of a thousand puppies. Pour yourself a classic lime rickey for its heat-wave healing powers, made stronger by the addition of our most refreshing herb: mint.
½ cup of fresh-squeezed lime juice (about 4-6 limes)
1 can of seltzer (12 oz)
½ cup mint simple syrup
½ package of Square Roots mint
½ cup sugar
½ cup water
Yield: 4 servings
Make a simple syrup by combining sugar, water, and mint in a saucepan. Save some mint for muddling.
Bring to a boil, and dissolve the sugar, stirring continuously. Strain syrup into a jar.
Muddle a lime wedge and a few mint leaves into four glasses.
In a pitcher, mix lime juice, ⅓ cup mint simple syrup, and seltzer. Adjust ratio to taste.
Top each glass with ice, and divide the lime juice mixture between the glasses.
Garnish each glass with any extra mint and lime wedges.
Make the syrup ahead of time + double the batch to have extra on hand.
Don’t over muddle—bruising the mint can lessen the flavor.
To make ahead of time; just leave out seltzer until right before serving.
Add gin for a different kind of refreshing.
