Square Roots Berry Basil French Toast Casserole with Spero Sunflower™ Cream Cheese Topping

We’ve teamed up with our friends at Spero Foods to shake up your typical breakfast routine and bring you this plant-based berry basil french toast casserole. You can bake it up for a weekend treat, or make it on a Monday to munch on throughout the week.

French Toast Casserole Ingredients
  • 2 tbsp ground flaxseeds

  • 6 tbsp water

  • 1 loaf of bread, your choice cut into cubes

  • 1 ½ cups non-dairy milk, your choice

  • 2 tsp vanilla extract

  • 2 tsp cinnamon

  • 2 tbsp maple syrup

  • ½ cup Square Roots basil, chopped with more for topping

  • 1 cup berries of your choice, cut into bite-size pieces with more for topping

Servings: 4-6

French Toast Casserole Directions
  1. Mix ground flaxseeds with water and let sit for five minutes. Meanwhile, cut bread into cubes and place in a well-greased baking dish. Preheat the oven to 350.

  2. Wisk non-dairy milk, vanilla extract, cinnamon, maple syrup, and flaxseed mixture together.

  3. Pour the mixture over the bread, add berries and basil, and mix. Let sit for 10 minutes or overnight.

  4. Bake for 35-40 minutes until set, top with Spero Sunflower™ Cream Cheese topping and extra basil and berries. Enjoy!

Beat Spero Sunflower™ Cream Cheese, coconut oil, maple syrup (if using), & vanilla extract until fluffy.
