Bacon, Arugula, Tomato Sandwich

The bacon, lettuce, tomato sandwich is an all-time classic in need of an arugula update. The powerful, nutty flavor of arugula perfectly compliments the juicy tomato and crispy bacon. So, if you’re looking to adult-ify your favorite sandwich, bench the lettuce, and let arugula step up to BAT.

  • 1 large, ripe tomato

  • 4 slices of bread

  • 6 slices thick-cut bacon or bacon alternative, cooked to your preference

  • ½ a package of Square Roots arugula (just about a handful)

  • 2 tbsp mayonnaise

  • Salt and pepper to taste

Yield: 2 sandwiches

  1. Slice tomatoes into thick, ¼” slices.

  2. Toast the bread until golden brown.

  3. Spread 1/2 tbsp of mayonnaise onto each slice of toasted bread.

  4. Layer in bacon, tomatoes, and ¼ cup of arugula. Season with salt and pepper.

Next-Level Tips
  • Level-up your mayonnaise by stirring in minced garlic, finely chopped basil or chives, salt, and lemon juice.

  • Create your own rub for the bacon (or a roasted, sliced portobello!) by combining brown sugar, chile powder, and paprika. If using a rub, bake your bacon in the oven at 400°F for 18-20 minutes instead of cooking it in a pan.
