Herb-y Leftover Turkey Salad

Looking forward to Thanksgiving goes hand in hand with looking forward to Thanksgiving leftovers. While there’s no shame in opening the fridge and grazing on cold turkey and sides, a little prep can turn your turkey and cranberry sauce into a completely new experience. This easy turkey salad only takes a few minutes to put together and is perfect on its own, in a sandwich, or on top of a bed of greens.

Turkey Salad

  • 3 cups leftover cooked turkey, shredded or chopped

  • 2 stalks of celery, chopped

  • ⅓ pack of Square Roots chives, chopped

  • ½ cup of mayonnaise or Greek yogurt

  • ⅓ cup of cranberry sauce

  • Salt and pepper, to taste

  • Squeeze of lemon juice

  • 1/2 pack Square Roots basil (optional)

Yield: 4 servings

  1. Combine turkey, celery, and chives in a large bowl.

  2. Add in mayonnaise (or yogurt), cranberry sauce, lemon juice, salt, and pepper; toss to coat.

  3. Serve on a sandwich with a layer of basil.

Next-Level Tips
  • Skip the bread and create a ssam by serving in cups of lettuce.

  • Make a few hours ahead of time and store in the fridge for enhanced flavor.

  • Add 1-2 teaspoons of curry powder for a curry turkey salad.
