12 Things to Snip Chives On

Chop, top, done. That’s our chives motto at Square Roots and we’re sticking to it. But if you’ve ever been unsure what exactly to top with chives, here’s a by-no-means-exhaustive list of our favorite foods to adorn with this onion-y herb. So go forth and snip.

Square Roots Chives

  1. Eggs. First and always. Fried, scrambled, over easy⁠—whatever your style, your eggs need chives. Bonus points if cheese and tomatoes are involved.

  2. Baked potatoes. The perfect receptacle for toppings on toppings, the classic baked potato is inevitably finished off with a dollop of sour cream. And of course, chives.

  3. Seafood. Fish, lobster rolls, crab cakes—chives pair perfectly with any seafood dish, the richer the better.

  4. Bagels with cream cheese. Snip a helping on top of your perfectly toasted bagel and schmear. You’ll never go back.

  5. Bloody Marys. Unlike mint and basil, we don’t typically think of chives as a cocktail ingredient. But the tomato and spices of the Bloody Mary are begging for a snip.

  6. Chili. Like the baked potato, chili really isn’t complete without a heaping spoonful of sour cream and chives.

  7. Risotto. Typically reserved for a more expert hand, risotto is worth the trial and error required to achieve perfection. And once you get there? Break out the chives to snip on top.

  8. Grilled corn. Slathered in butter and topped with chives, your barbecue just went gourmet.

  9. Ravioli. Any sort, but especially ravioli stuffed with ricotta cheese. Trust us.

  10. Grain bowls. Piled high with your favorite greens, eggs, sunflower seeds; tossed with your favorite dressing; and finished off with, you guessed it, chives.

  11. Hummus. A Square Roots staple, hummus with a sprinkle of chives can take the humble cracker to new heights.

  12. Vinaigrettes. Along with chopped garlic and a pinch of salt, chives up the game of your everyday dressing.

When we say this list isn’t exhaustive, we mean it. Take chives for a spin with pizza, mac and cheese, hot dogs, martinis, crudite, steak, soups, stews, perogies, creamy dips, pesto, caviar, popcorn, cornbread, pancakes, bellinis, chicken/potato/egg salad, tabouleh, polenta, burgers, spring rolls, fried rice, dumplings, french fries, poutine, sour cream and onion dip, or hollandaise sauce to see its goodness for yourself.
