Square Roots' Simple Tomato Sauce Ingredients

No tomato season is complete without a simple homemade sauce that you can cook on repeat and still have friends knocking for impromptu parties. No blanching, stewing, or otherwise tedious tasks necessary. You can spend those few extra minutes customizing, so everyone from vegans to carnivores can enjoy.

  • 1 pack Square Roots basil

  • ¼ cup extra-virgin olive oil

  • 3 garlic cloves, thinly sliced

  • 2 pints cherry tomatoes (or equivalent quartered tomatoes)

  • 6 oz pasta of choice

  • ⅓ cup white wine or reserved pasta water

  • ½ cup grated Parmesan cheese

  • Crushed red pepper flakes, to taste

  • Kosher salt, to taste

Yield: 2 servings

  1. Heat oil in a large sauté pan over low heat. Add garlic and stir until softened but not browned, about 2 minutes.

  2. Increase heat to medium-high. Stir in tomatoes, red pepper flakes, and a pinch of salt. Cook, swirling the pan often, until tomatoes start to blister, 8 minutes.

  3. With a spoon, gently press down on tomatoes until the skins ‘pop’ to release their juices.

  4. Pour the white wine or reserved pasta water and cook until a chunky, thickened sauce begins to come together.

  5. Remove pan from heat, stir in ½ cup torn basil leaves, and set aside.

  6. Meanwhile, cook pasta according to package instructions and drain.

  7. Transfer cooked pasta to a serving dish, and stir in the tomato sauce until fully coated.

  8. Fold in Parmesan, sprinkle with remaining basil leaves, and season with salt.

  9. Serve, party, repeat.

We made the serving size for this recipe small, with the intention that you can make a few different batches at once to feed your crowd however they need.

Customization Options

Meat lovers: Before adding tomatoes, add ½ cup of your favorite ground meat (we like ground chicken or turkey) to the pan and cook over medium heat until just before fully cooked. Season with salt and carry on with recipe.

Gluten free: Opt for a gluten-free pasta, like quinoa or chickpea pasta.

Vegan: Use vegan cream cheese or nutritional yeast instead of parmesan.
