Herb Summer Rolls

Who doesn’t want to eat salad with their hands? We love fresh summer rolls for how versatile they are—add a protein like tofu or chicken, and swap out any suggested veg for whatever looks best at the farmers market. These can be prepared ahead and served at room temp, making them easy for summer picnics and on-the-go lunches!

Square Roots Herb Summer Rolls


Summer Rolls

  • 2 ounces thin rice vermicelli

  • 12 8-inch rice paper rounds

  • 8 large Bibb or red leaf lettuce leaves, halved

  • 1.5 cup Square Roots mint

  • 1.5 cup Square Roots basil

  • 2 cups fresh bean sprouts

  • 1 large carrot, shredded

  • 1 large red bell pepper, thinly sliced into 2-inch matchsticks

  • 1 cucumber, thinly sliced into 2-inch matchsticks

Nut Butter Dipping Sauce

  • 2/3 cup hoisin sauce

  • 1/3 cup creamy peanut butter or nut butter of choice

  • 1/3 cup water

  • 3 tablespoons fresh lime juice

  • 1 1/2 tablespoons soy sauce

  • 1 teaspoon chili paste (if you like it hot)

Yield: 12 rolls

Summer Roll Instructions
  1. In a medium saucepan, bring several cups of water to a boil. Add the rice vermicelli and cook until just softened about 2-3 minutes. Drain and rinse under cold water. Set aside.

  2. Lay out the rest of the summer roll ingredients before assembling.

  3. Fill a shallow dish with warm water. Working with 1 rice paper round at a time, dip in water, until just pliable but not limp (you want to avoid over-soaking or tearing), about 20 seconds. Transfer to a cutting board lined with linen or paper towels.

  4. Place 1 lettuce leaf in the center of a rice paper round.

  5. Top with a small handful of vermicelli and a few pieces of shredded carrot, cucumber, bell pepper, and bean sprouts. Have fun with the filings—you do you!

  6. Sprinkle the fresh mint and basil to taste (more is more).

  7. Fold the bottom of the rice paper over the filling, then fold in sides and roll tightly like a burrito into a cylinder; cut in half if desired.

  8. Place roll, seam side down, on a platter. Repeat.

  9. Serve with dipping sauce at room temp.

Sauce Instructions
  1. Combine dipping sauce ingredients in a bowl, whisk until smooth.

  2. Can be made 1 day ahead and stored in the fridge.

  3. Bring to room temp before serving.
